4 medium firm tomatoes
4 green onions (or 1 small shallot)
¼ cup fresh mint (chopped)
½ tsp sumac
½ tsp salt
2 tbsp olive oil
Juice of ½ lemon
Dice the tomatoes and slice the green onions/shallots. Place in a bowl and add mint, sumac, salt, olive oil and lemon juice. Toss and serve.
